There are just as many chefs as there are debates about oils and the various ones to use when cooking. I personally switch them out depending on what I am cooking and the aromas I want to draw out from the food. I always give readers my take on the various oils and then they can incorporate them as they see fit. There are other healthy oils that can be considered aside from vegetable and canola oil, however, and they are definitely worth checking out.
